         Bitter melon or Bitter Gourd salad, Aside from ampalaya's medicinal value it is good source of vitamins and rich in Iron, eating ampalaya also produce more Insulin, that controls the blood sugar level it is very effective home remedy for diabetics, to reduce bitterness the sliced ampalaya could be soaked in salt water solution for atleast 5mins after that here is How i made my version of ensaladang ampalaya serve as an accompaniment to other dishes

                                                         



Ingredients:

1 big size ampalaya cut in half and sliced
2 pcs  fresh tomatoes
1 cup white vinegar
1/4 tbsp. sea salt
1/4 tbsp. ground black pepper
3 tbsp. apple cider vinegar & honey
1 tbsp. Brown sugar
1/2 lemon
                                                                           
                                                                                                    


                                                                                       
Procedures:
  1. Blanch slices of ampalaya in white vinegar for a minute
  2. Put ampalaya in a bowl add 2 pcs freshly tomatoes slice
  3. in a separate bowl combine 3 tbsp. apple cider vinegar and 1 tbsp brown sugar stir it together and add to the bowl of ampalaya
  4. add Sea salt, pepper and Squeezing of Lemon
  • finally Toss everything together  and ready to taste.
